So here’s a super snack that was shared by one of our members Nic in our private members area and is a favourite with our Cannock bootcamp ladies.
Its High in protein and full of fibre from the vegetables which are both vital for a leaner body.
Give this recipe a try….
Healthy Egg Muffins.
Ingredients.
- 1 tablespoon olive oil
- 6 whole eggs
- 2 handfuls baby spinach – roughly chopped
- 1 handful red pepper chopped
- 1 handful green pepper chopped
- 1 handful cherry tomatoes chopped
- 1 handful of mushrooms chopped
- Cracked Black Pepper
Instructions.
- Preheat oven to 180 degrees celsius
- Chop up all veg and whisk 6 whole eggs then mix the veg in with the eggs and add your pepper. You can sauté the veg first if you choose.
- Add the mixture to a muffin tray and put into the oven.
- Cook for around 12-15 mins and then insert a knife into the muffins. If the knife comes out clean then you know they are cooked.
- Allow to cool for a few mins before serving. You can eat these straight away or store them away in the fridge for later. Just be sure to warm them up properly in the microwave before serving.
Give this healthy filling snack a go to get more vegetables and protein into your diet to keep hunger at bay between meals or as part of a main meal.
